Hello and Welcome to My Blog!
My name is Joni, and I live on the island of Roatan. One of the Bay Islands located 30 miles off the north coast of Honduras. My day job for the last 20 years is the Assistant Manager at Anthony’s Key Resort, one of the pioneer scuba diving resorts in the Caribbean. In the evenings, you’ll find me at home with my family, doing homework with my youngest son, cooking, and blogging!
The culinary delights on the Bay Islands are unique because of the unusual mix of cultures found here. The Bay Islands were once a British colony, and many of our ancestors migrated here from England and other parts of Europe. Over 150 years ago, the Bay Islands became Honduran territory. With Honduras being a Spanish country, you’ll not only find both English and Spanish spoken here, but you’ll also find a fusion of Latin flavor in our island cooking.
I started this blog as a way to document and share some of the traditional island recipes but you’ll also find some of my own inventions, or whatever I’m cooking for dinner! As you can imagine, working full time in the hotel business is a task in itself, so you’ll find that most of my recipes are quick and easy. They are also resourceful because we don’t have access to every ingredient here on the island, so knowing how to improvise and substitute is key!
Cooking has not always been my favorite thing. My mother once gave me an apron that read: “Born to shop. Forced to cook.”And I couldn’t have said it better myself! But over the last 20 years of being married and raising a family, I’ve learned to enjoy cooking. My real passion, however, is all things digital. Online shopping, website design, social media; you name it! Now, this site allows me to marry the two. Something I have to do, with something I love!
