Pineapple Surprise Cookies

Traditional Bay Island Pineapple Surprise Cookies.

  • 6 1/2 Cups Flour
  • 2 tsp. Baking Soda
  • 1 tsp. Baking Powder
  • 1 tsp. Salt
  • 2 1/2 Cups Sugar
  • 1 Cup Butter
  • 2 Eggs
  • 3 tsp. Vanilla
  • 1/4 Cup Sour Cream


  1. Preheat oven to 400˚.
  2. Sift together: Flour, baking soda, baking powder, and salt.
  3. Cream together: Sugar, butter, eggs, and vanilla.
  4. Add sour cream to sugar mixtures.
  5. Then add flour, one cup at a time and mix well.
  6. Turn out onto a floured surface and roll out until 1/2 inch thick.
  7. Cut into circles with a cookie cutter.
  8. Gather remaining dough and roll out again to continue cutting into circles.
  9. Place cookies on a prepared cookies sheet.
  10. Put one spoon full of pineapple jam in the center.
  11. Place another cookie on top and seal edges with a fork.
  12. Bake until golden brown.
