Preheat oven to 400˚.

Sift together: Flour, baking soda, baking powder, and salt.

Cream together: Sugar, butter, eggs, and vanilla.

Add sour cream to sugar mixtures.

Then add flour, one cup at a time and mix well.

Turn out onto a floured surface and roll out until 1/2 inch thick.

Cut into circles with a cookie cutter.

Gather remaining dough and roll out again to continue cutting into circles.

Place cookies on a prepared cookies sheet.

Put one spoon full of pineapple jam in the center.

Place another cookie on top and seal edges with a fork.

Bake until golden brown.
