The origin of the name “Pineapple Surprise” is unknown to me, but it is their common name in the Bay Islands. I suppose when biting into the pineapple-filled center, it is an unexpectedly sweet surprise! And thus the name — Pineapple Surprise Cookies.
Pineapple Surprise cookies are the most common cookies you’ll find here in the Bay Islands. At just about every bakery you’ll find freshly baked pineapple surprise cookies. And during special events and holidays, you can often find local ladies selling them from a stand on the side of the road. Sometimes, they will walk around in the town selling them; the cookies wrapped in cloth and in a large plastic tub, effortlessly balanced atop their heads. In that same pan, you may also find fresh coconut bread, and sticky cinnamon buns to name a few!
Steps in Making Pineapple Surprise Cookies
To begin, pre-heat your oven to 400˚ Fahrenheit. Then start by sifting together six-and-a-half cups of flour, two teaspoons of baking soda, one teaspoon of baking powder, and one teaspoon of salt, then set aside.
Now cream together two-and-a-half cups of sugar, two sticks (one cup) of butter, two eggs, and three teaspoons of vanilla.
Then add one-quarter cup of sour cream to sugar-butter-egg-vanilla mixture.
Once all wet ingredients are mixed, start adding the flour mixture, a cup at a time until all incorporated.
On a floured surface, roll the dough out with a rolling-pin until it is about a half-an-inch thick.
Cut the dough into circles with a cookie cutter and place them on a prepared cookie sheet. Gather the dough and roll out once more to continue cutting out the cookies. Then, place a spoonful of pineapple jam in the center of the cookie and then put another cookie on top of the filling and seal the edges of both together with a fork. You could use the pineapple jam recipe here, or use store-bought pineapple jam.
Bake at 400˚ Fahrenheit until golden brown.

Recipe for Pineapple Surprise Cookies
- 6½ Cups Flour
- 2 tsp. Baking Soda
- 1 tsp. Baking Powder
- 1 tsp. Salt
- 2½ Cups Sugar
- 1 Cup Butter
- 2 Eggs
- 3 tsp. Vanilla
- ¼ Cup Sour Cream
- Preheat oven to 400˚.
- Sift together: Flour, baking soda, baking powder, and salt.
- Cream together: Sugar, butter, eggs, and vanilla.
- Add sour cream to sugar mixtures.
- Then add flour, one cup at a time and mix well.
- Turn out onto a floured surface and roll out until ½ inch thick.
- Cut into circles with a cookie cutter.
- Gather remaining dough and roll out again to continue cutting into circles.
- Place cookies on a prepared cookies sheet.
- Put one spoon full of pineapple jam in the center.
- Place another cookie on top and seal edges with a fork.
- Bake until golden brown.
